Even the school’s cafeteria tacos used to buss, so naturally, the one’s you make for yourself & family will too.
On top of it being amazing, these delicious chicken tacos do not require an understanding of rocket science, it’s just that simple. And for our busy Queen Bee mommy’s out there, they also don’t take forever. Tacos also make sense for a summer meal, you know, it gives you’re enjoying a nice breezy night out and stumble across the most amazing taco truck, except, this time, it’s you… you’re the taco truck 😘.

How to Make Delicious Chicken Tacos Perfect for Summer

Soft Flour or Corn Tortilla
3 Chicken Breasts
1 Red Bell Pepper
1 Green Bell Pepper
1 Purple Onion
1 Can Crushed Tomato
1 Cup Water
Salt (to taste)
Black Peper (to taste)
Onion Powder (to taste)
Cajun Season (to taste)
Montreal Chicken Season (taste)
Choice of Cheese (I used mozzarella)
Directions
- Boil chicken in salted water for 15 minutes.
- Slice peppers and onions, cook on medium heat & season (measure with your ❤️)
- Sauté peppers and onions on medium-high heat.
- Once cooked, shred chicken.
- Add can of crushed tomatoes to sautéed pepper and onion mix.
- Add shredded, pour cup of water & mix.
- Season mixture.
- Continue cooking on medium-high heat for 5-10 minutes.
- Dip tortilla in chicken mixture, place on pan, add cheese, add chicken, fold tortilla, and cook each side until golden brown.
Notes
- This made a total of 20 chicken tacos, so use one less chicken breast and less crushed tomatoes, if you are not looking to make that many.
- Have fun with it & make it yours!
Making the Chicken
Boil your chicken in salted water until the inside of the chicken is cooked through and no longer raw. Once chicken is done, shred up the chicken using a fork. The chicken will be seasoned later when you make the taco filling, so don’t worry about seasoning it now.
Making the Chicken Taco Filling
To save time, while your chicken is boiling, go ahead and slice your peppers and onions and begin sautéing them on medium-high heat on a lightly-oiled pan. Season with with salt, pepper, and cajun seasoning making sure to measure with your ❤️.
To this mixture, add in the can of crushed tomatoes, shredded chicken, and cup of water. Once thoroughly incorporated, begin seasoning the mixture with sale, pepper, onion powder, cajun seasoning, and Montreal chicken seasoning making sure to measure with your ❤️.
Mix and cook through for another 5-10 minutes so all flavors of these delicious chicken tacos are shining, not just ✨tomatoes✨.
Delicious Chicken Taco Assembly
Dip a tortilla on both sides in the chicken taco filling and place on medium-high pan. Cover the tortilla in a layer of the cheese and add chicken to half of the cheesy tortilla.
Fold the tortilla in half and cook until the cheese fully melts, or until each side is crispy and golden brown. Continue this until you’ve either run out of tortillas of the delicious chicken taco filling.
